1.5 c Onion chopped (2Blocks Carbohydrate)
1.5T Onion Powder
2c Raisins (29Blocks Carbohydrate)
1can Diced Tomato (.5Blocks Carbohydrate)
5 Sweet Potato, peeled and quartered (24Blocks Carbohydrate)
2 Eggplant, peeled (6Blocks Carbohydrate)
64oz Plain Yogurt (9Blocks Protein, 9Blocks Carbohydrate, 37Blocks Fat)
2c Light Coconut Milk (1Block Carbohydrate, 18Blocks Fat)
1c Parmesan Cheese (3Blocks Protein, 11Blocks Fat)
Salt Pepper to taste
-Preheat oven to 400F.
-Bake sweet potato for 40 minutes or until a fork slices smoothly. When cooled, smash the quarters using a large mixing spoon into a chunky sweet potato mash.
- Mix section 1 and allow cooling.
-Mix sauce ingredients
-Slice the eggplant in half long ways. Slice again into ¼ inch slices until all the eggplant is prepped.
-In a large baking dish, spread ½ of sweet potato. Layer with eggplant slices, ½ meat mixture and ½ sauce. Repeat again. Bake for 30 minutes covered and 10 minutes uncovered. Fork should slice easily through Moussaka.
